This Grand Cru Classé of Saint-Emilion sits on a pretty gravelly terroir of 19 hectares on the edge of the Dordogne. For ten years now, he has benefited from the same care as his big brother, Château Cheval Blanc.
The work in the vineyard, the winemaking and the aging meet the same requirements as its elder. The oenological philosophy and the viticultural convictions are the same for a great wine which will know how to be open and expressive at its young age, complex and distinguished when it is kept in the bottle.
Carried out by the Cheval Blanc team, the work in the cellar is identical to that of the Premier Grand Cru Classé: fresh maturation, plot vinification, indigenous yeasts, gentle extraction, long maceration, manual pumping over and malolactic fermentation in vats.
A deep red color, with a clear and limpid color. A very greedy nose, with mixed red and black fruits, in a pastry universe (balsamic, vanilla, caramel, coffee …), a little hint of liquorice which brings a lot of freshness. A nice gourmet toast, and a floral hint that arrives on air with a note of rose, peony, all in a beautiful intensity on air.
The attack is suave, full, greedy, rich, with a nice grain of tannins allowing a tender and creamy mid-palate. A wine showing roundness and seduction, a nicely coated finish, and an aromatic return of black fruits, which marks this hot vintage.
